DAY 8 - HOLA MEXICO! MY TRIP TO BAJA MEXICO, SEA OF CORTEZ SERIES


DAY 8...


On the morning of my last day, the sun once again made its presence as it peeked over the water on the Sea of Cortez, it reached out and touched my face for a final time.  A level of sadness hit me as I knew this was the end of waking up and staring out of my hammock to see the ocean horizon and the beautiful views around me.

As expected, I was just warming up to the routine of this magical place, and now the time has come for me to leave.  It's been a life changing trip.  Seeing different things through culture, people, and environments reminds oneself of what a huge, wonderful world we live in.  Appreciation of the similarities in our humanity but at the same time, recognizing the differences that make us unique.

Not wanting to miss one opportunity to see and experience new things, we were up with the sun.  Neighbors, Paul and Julie invited us for a boat ride to the north point of the bay for some snorkeling.  Having their boat parked just off shore from the beach in front of their house, we took their small dingy, and headed out early.

Paul and Julie are skin divers.  They have been doing this since the 1980's.  Skin diving is the the act of underwater diving without the aide of a scuba tank.  The divers hold their breath while maneuvering under water.

These fins are specific to skin divers.  With the extended length of the fin, the diver is much more efficient and is able to reach measurable depths with a lot less effort than a scuba diver.  Paul has been to depths over 100'.





Paul is also very good at spear fishing.  You can see the spear in his right hand with the red end.  Spear fishing is popular among skin divers.  It is an effective and ancient fishing technique.  



Paul uses a brightly colored buoy to mark his whereabouts and to warn other boats that a diver is in the area.

Diving down was fun but took a pretty good effort with a buoyant neoprene wetsuit and no weight.  You had to work for it!

After we got back from snorkeling, Brian was hard at work in the kitchen making some of the best seafood chowder I've ever tasted.  Brian was nice enough to share the recipe and gave me permission to share it with you!

Here ya go!

BRIAN'S SEAFOOD CHOWDER


BACON - 1/2 PACKAGE, CHOPPED
ONION - 1 WHOLE, DICED
CHICKEN STOCK - 1 CARTON

POTATOES - 5, DICED
CARROTS - 3 LARGE, DICED
GARLIC - 1 BULB, MINCED

CHARDONNAY WHITE WINE - 1 CUP
WORCESTERSHIRE - 1 OZ
TOMATO SAUCE - 1, 8 OZ CAN
STEWED TOMATOES - 1, 16 OZ CAN
HOT SAUCE - COUPLE OF SHAKES (1/2 tsp)

WHITE MUSHROOMS - 10, SLICED
CELERY - 4 STALKS

SHRIMP - 1 POUND
FISH - 1 POUND
CLAMS - 2 POUNDS, IN THE SHELL
SCALLOPS - 1 POUND



HALF AND HALF - 1 PINT

  • In a large stockpot over medium heat, cook the bacon until browned.  
  • Add onion and cook until it begins to get soft.  
  • Add chicken stock.  
  • Add potatoes, carrots, garlic, white wine, worcestershire, tomato sauce, stewed tomatoes, and hot sauce.  Cook for about eight minutes, or until potatoes and carrots are slightly fork tender.  
  • Add the mushrooms, celery, shrimp, fish, clams, and scallops.  Simmer for about 10 minutes.  
  • Add the half and half and heat through slowly.  Do not boil.
  • Serve and enjoy!






As I reflect back on my trip, I take time to remember not just the things I saw but, the things I felt.  Total strangers treating you as if they already knew you as they welcomed you into their establishments, their homes, and their lives.  It is these feelings that I embrace and maintain in my positive outlook for mankind.  With all of the negativity in the world, it is the positive that I seek.  It is the positive that keeps a smile on my face and a warmth in my heart.  The positive that makes you want to live life to the fullest, dig deep, and release your true inner self.  The positive to move forward and make a difference.  A difference for myself and more importantly, a positive difference to those I am around.
